How To Choose The Best Hand Blender For Cake?
When you are about to buy a hand blender, it is important to take into account some aspects that will help you make the right decision and based on your specific needs. Try to follow the purchase criteria that we recommend below:
1. Type and use
The first thing you need to ask yourself is the use you will make of the hand blender. Depending on the answer, you can choose a simple or a more comprehensive model. As we have pointed out, it doesn’t make much sense to buy a latest generation hand blender if you want to make simple purees. In this case, one of the conventional ones will be cheaper and more functional.
2. Power and engine type
The most important factor to consider, when you want to buy a hand blender, is the one concerning the characteristics of the motor: not only the power absorbed by it, but also its type, whether with direct current (DC) or alternating current (AC).
Without going into the technical details that would remain incomprehensible to most, we only emphasize that many consumers are unaware of the significant differences between DC and AC motors. This is not surprising if we consider that the overwhelming majority of hand blenders on the market, that mount direct current motors, while the second type of motors are found only on more niche products, intended for professional or semi-professional use.
The difference, in short, affects two characteristics of the blender: the absorbed power (therefore consumption) and the duration of continuous use. Let’s see how:
a. Power absorbed
DC motors can present, from this point of view, very different values, from about 200 W to 800 W of the most powerful models, with a significant progression of the comminution capacity as the power increases (more powerful tools mince and whisk harder foods).
In the case of AC motors, on the other hand, lower powers are found, from about 150 to 300 W, without this implying any limitation in use
b. Duration of use
Because of technical characteristics that we are not here to examine, the DC motors are very susceptible to overheating, and the manufacturers recommend in fact to activate them intermittently, for about 30 seconds, and to let them cool at least two minutes after every five shots.
This is not so for AC motors, which are able to work for much longer periods without consequences for their integrity.
In light of these characteristics, it is clear why the most professional hand blenders are fitted with AC motors. They are able to withstand very intensive and prolonged use, without necessarily resulting in very high energy consumption or risking damage to the instrument.
3. Delivery speed and levels
The second factor that we consider important to consider when choosing a hand blender is that relating to the power delivery speed and levels.
In a vast majority of cases, hand blenders (with both DC and AC motors) have at least two power levels available: one “normal” and one “turbo”. The second is normally the one that takes full advantage of all the power absorbed by the engine, while the first is limited to a lower output.
In commercial models with DC motor, the delivery levels increase in number with the increase in both the power and the versatility of the product. Often the most equipped hand blenders have ten or more power levels selectable.
In many cases, the power level is set via a selector ring and the operation is then done through a single activation button.
In other models, on the other hand, selection and activation are concentrated in a single “trigger”, which, when pressed more or less fully, adjusts the power delivered in an easy and intuitive way. The most advanced models also reach 20 power levels.

Let’s see them one by one.
a. Shank
First of all, it must be said that most commercial models have a separable stem, practical for cleaning operations, as we will see later, but which introduces an element of fragility in the overall design. Semi-professional or professional models, on the other hand, usually have a fixed stem design and a fully waterproofed machine body.
If you choose a model with a detachable shank, it is important to evaluate the solidity of the coupling and release system, taking into account some characteristics of different systems that you can meet:
- Single button release: In these models, the shank engages by pressure and is released by pressing a special button. It can be fragile if the locking elements are made of soft plastic and if the button has a spring.
- Double button release: In this case, the shank always engages with pressure and is released by pressing two buttons simultaneously. It can be fragile for the same reasons as the single button system, increased by two double button release hand blenders.
- Screwing: The stem engages and disengages by screwing it to the motor body. It is the most solid of the three systems, since it does not have any moving parts that can break.
b. Blades and bell
The design of the blades and the bell that protects them is important not only for cleaning your work surface, but also for the effectiveness of the blender.
The number of splashes generated by the blender in action can depend on the profile of the bell, and a good model will guarantee you the absence of splashes through a special anti-splash design. But not only: the interior design of the bell is also important, since it can be subject to the accumulation of residues that are not captured by the blades, generating incrustations that limit the effectiveness of the shredding action.
A good model will therefore adopt an internal design with ribs, openings or other devices to favor the continuous flow of food.
The blades themselves obviously play a fundamental role in determining the effectiveness of the hand blender. Most of the models on the market have two blades, but there is an inclination to change to four blades, of which two are often long and two short.
c. Materials
It goes without saying that elements that are to be immersed in foods that are to be ingested, the quality and safety of the materials is a very important aspect to be taken into consideration.
As regards the immersion shank and the machine body, there are basically two materials of which it can be composed: plastic (of the ABS type, for its resistance) and stainless steel.

As for cleaning after use, if you have chosen a model with a detachable shank you can most likely wash the immersion bar in the dishwasher, but we recommend following the manufacturer’s instructions given in the booklet, especially if the shank is in plastic.
